Black bean salsa

  It's almost too simple to talk about it but it's too good to not to.  My husband said " it's one of your last minute concoction".  I take it as a compliment and a keeper. We had some for an afternoon snack with whole grain crackers and we finished it up with our sandwich for dinner.  Very tasty. Carrot slaw

Carrots and string beans are always a good thing to bring on vacation because they last long, unlike cucumbers for example.  Nowadays our meal is often a simple sandwich but the side dish vary and today is carrot slaw.  Carrot slaw Ingredients  4                                                                         Shredded carrots  2                                                                         Thinly sliced string beans 1 teaspoon                                                       Chives 1 teaspoon                                                       Carrot top ( or parsley) 1/4 teaspoon                                                    Jamaican rub 1 teaspoon                                                       Lemon juice 2 teaspoons                                                     Olive oil Directions  Mix everything together and there you have it.   I know sring beans and Jamaican rub is weird but it is "à la Scott", make it "à la you", al

We are on vacation on our boat and our fresh food supply is getting low but I manage to have a healthy, balanced and yummy lunch. Turkey, cheese and cherry tomatoe bites Ingredients   4                                                                             Turkey slices 1                                                                             Slice of cheese divided 3                                                                             Pieces of celery top  3                                                                             Pieces of chive 4                                                                             Cherry tomatoes 1                                                                             Dash of salt and pepper on each slice Directions  Lay the turkey slices on a plate, put the cherry tomatoe in the middle with the pieces of herbs, cheese and salt and pepper.  Serve with nut thins.  Wrap the slices around the tomatoes and enjoy.  It'
