Christmas Foccacia Bread



 How to make foccacia bread art without a mixer. 

Christmas Foccacia Bread

1 tablespoon (or 1 sachet)                  Dry yeast

2 cups, then 2 tablespoons                 Warm water

1 teaspoon                                              Sugar

1 1/2 teaspoons                                       Salt

4 1/2 to 5 cups                                         All purpose unbleached flour

1/2 cup                                                     Olive oil

String beans, cherry tomatoes, scallion and garlic for the top.

Directions 

Mix the yeast with the sugar and 2 cups of warm water, in a big bowl.  Wait 2 minutes and see if it bubbles.  

If so add 1 cup of flour and 1 1/2 teaspoons salt and mix with a spatula.  Add another cup of flour and mix.  Add a third cup of flour, mix and fold the best you can.  Add 1/2 cup oil and mix the best you can.  Add 1 cup flour and mix. 

Add 2 tablespoons warm water and mix.  Add 1/2 cup flour and mix to combine. The amount of flour may vary depending on your flour, the temperature and the humidity level of your kitchen. At this point the dough should be soft and not sticky.  Oil the bottom of the bowl, wet a dish towel with hot water, cover and put in the oven with the heat off and the light on (tell your family about it). Let rise for 90 minutes.

Line a baking sheet with parchment paper and oil it.  Drop the dough on it and spread with your fingers, making little holes without piercing it.

Return in the oven with no heat but the light on. Let rise for 90 minutes.

Meanwhile prepare your veggies.  If you want to make a Christmas  tree or another picture, I suggest you make a rough sketch on a cutting board to see if you like it. 

Take the bread out of the oven, preheat to 450°F. (230°C.)

Arrange your veggies like so or create your own.



Spray with olive oil.  Cook 20 minutes, then reduce the heat to 400°F.(200°C.) And cook 10 more minutes.

I prefer making art with veggies than with food coloring.

Play with and eat your veggies and be healthy.  Make it à la you and bon appétit!

  MINI BLUEBERRY CORNBREAD MUFFINS    Ingredients  3/4 cup.   Milk (evaporated milk works well) 1 tablespoon lemon juice (zest it before juicing it) 1 cup.  Flour 3/4 cup.  Whole wheat flour 1/2 cup.  Yellow cornmeal (I want to try 1/4 c. more) 1/2 cup.   Sugar 2 teaspoons.  Baking powder 2.   Large eggs 1 1/2 teaspoons vanilla Zest of 1 lemon 1 stick.   Salted butter 1 cup.     Frozen blueberries (I want to try 1/4 cup more next time) Directions Preheat the oven at 350°F and set oven rack in the middle.  Combine 3/4 cup of milk with 1 tablespoon on lemon juice and the zest of one lemon in a small bowl (remember to zest it first as you will need it). Meanwhile sift 1 cup of all purpose flour and 3/4 cup of whole wheat one, 1/2 cup of yellow cornmeal and 2 teaspoons baking powder.  Mix.  In a separate bowl mix 1 teaspoon of the dry ingredients to 1 cup of frozen blueberries....
