Egg pizza

Egg pizza (Gluten free, low carb) Ingredients  2                                                                             Eggs per serving 2 tablespoons                                                      Water * Salt and pepper to taste. 3 tablespoons                                                       Marinara sauce About 1/2 cup                                                       Mozzarella 1 teaspoon                                                             Butter A of spray of olive oil Toppings of choice, I like thinly sliced onion, pepper and mushrooms. For Scott it was thinly sliced fennel, julienned carrots and 2 slices of cooked turkey bacon, cut in small pieces. Directions  Beat the eggs with 2 tablespoons water, salt and pepper.   Spray a nonstick ovenproof pan with olive oil and melt 1 teaspoon butter to medium heat.  Add the eggs, cover for about 3 minutes or until set.   Turn the oven to broil, top with sauce, cheese and whatever you want.  Broil for 3 to 4 min

Baked haddock

  Baked haddock Perfect weekly meal Ingredients 4                                                                           Filets of haddock 10                                                                         Saltines 2 tablespoon                                                     Melted butter  1 teaspoon                                                         Curry powder  1/2 pinch                                                            Cayenne pepper  Salt and black pepper to taste Olive oil. Directions  Preheat to oven to 425° F. (220°C.) If using thawed fish, dry them using paper towels. Sprinkle half of the spices on both sides.  Spray a sheet pan lined with parchment paper with olive oil. Place the filets in one layer.  Crush the saltines in a plastic bag, using a rolling pan or your hands.  Add the other half of the spices. Spread evenly on top of the filets.   Melt 2 tablespoons butter and pour over the crumbles. Put in the preheated oven for 13 minutes and 2 minu
