Chicken burger and healthy BBQ sauce

Chicken Burger


Ingredients

1 cup divided                                                   All bran cereal 
1/8 cup                                                              Milk of choice
1/2 teaspoon                                                   Garlic powder 
1/2 teaspoon divided                                   Kosher salt
1 pond                                                              Ground chicken
2 teaspoons                                                    Mustard
1 teaspoon                                                      Chives
1/2 teaspoon.                                                  Fresh ground pepper
A zigzag                                                           Siracha                               



Directions

In a big bowl, mix 1/2 cup of All Bran, 1/8 cup of milk, 1/4 of a teaspoon of garlic powder, 1/4 of a teaspoon of salt, 2 teaspoons of mustard, 1 teaspoon of chives,1/4 teaspoonof black pepper and a zigzag of siracha. Then add chicken, combine gently with hands.  Divide in four and form the patties.

Mix 1/2 cup of All Bran with 1/4 teaspoon of Kosher salt, 1/4 teaspoon of garlic powder and 1/4 teaspoon of pepper in a small blender.  Put on a plate and dredge the patties with the All Bran mixture.

Cook on medium high both side 4 minutes on an oiled grill or pan uncovered, then 4 more minutes each side on medium low and covered.

Healthy BBQ Sauce

Ingredients

1 cup                                                                    Vegetable stock
3/4 cup                                                               Crushed tomatoes
1/2 cup                                                                Apple sauce
4 tablespoon                                                     Turbinado cane sugar
2 tablespoon                                                    Apple cider vinegar
1 teaspoon                                                        Onion powder
5 squirts                                                            Dijon mustard
1/2 teaspoon                                                    Kosher Salt
1 1/2 teaspoons                                               Liquid smoke
1 teaspoon                                                       Garlic purée
1 teaspoon                                                       Turmeric 
1 teaspoon                                                       Paprika
1 teaspoon                                                       Chili powder
1/2 pinch                                                          Cayenne pepper 

Directions

Mix all the ingredients in a sauce pan.  Bring to a boil, reduce the heat to medium low and  let  simmer for 20 minutes.

Here I served it à la Claudie, on a bed of lettuce.  Serve yours à  la you and bon appétit!

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
