Baked Chicken Meatballs





How to make healthy, delicious and satisfying meatballs.


Baked Chicken meatballs

Ingredients

2 tablespoon                                                         Grill seasoning
6 cloves                                                                  Grated Garlic 
1 cup                                                                       Cottage cheese
1/2 cup                                                                   Parmesan
10 leaves                                                                Fresh basil
                                                                     (Or 1 tablespoon of dry)
2                                                                               Eggs
1 1/2 cup                                                                Breadcrumbs divided
2                                                                               Scallions
1/2 teaspoon                                                         Crushed red pepper flakes
3 lbs.                                                                        Ground chicken

Directions 



Mix all ingredients in a big bowl with a spatula except the chicken and 3/4 cup of breadcrumbs. Preheat the oven to 450°F.  and line 2 sheet pan wirh parchment paper.  Add the chicken and mix gently just to combine.

You can skip the next step and just combine all the breadcrumbs in the mixture but I really like the  crispier exterior it creates.

Place the remaining 3/4 cup of breadcrumbs in a plate.   Spray olive oil on the parchment paper,  on your 1/8 cup and your hands.  Shape the balls using the 1/8 cup then roll in your hands then in the breadcrumbs.  Spray the balls with olive oil and put in the oven for 15 minutes, then 2 more minutes on broil.

On meatballs day I do my no cook marinara sauce  that I whip up while the balls are baking and the spaghetti is boiling.  I keep half a cup of spaghetti water, drain the pasta, put the sauce in the pan to warm up, put the spaghetti back with the pasta water and it's warm and ready at the same time than the meatballs.
