Turkey meatloaf




Turkey meatloaf

Light, flavorful, wonderful as left over too.

Ingredients 

2 cups                                                                 grated carrots 
1 cup                                                                   oatmeal
1/4 cup                                                               fennel (optional) 
1/2 cup (divided)                                           BBQ sauce
1                                                                          egg
4 to 8 cloves                                                      garlic (my husband loves garlic)
3 lbs                                                                    ground turkey
1/2 teaspoon                                                     red pepper flakes
Salt and pepper to taste

Directions 

Preheat the oven to 375°F. (190°C.)

In a big bowl, mix the ingredients except the turkey and 1/4 cup of BBQ sauce with a spatula.  Add the meat and combine.  Transfer on a baking sheet, lined with parchment paper and form in a football kind of shape.  Cover with the remaining 1/4 cup of BBQ sauce and freshly ground black pepper.   Cook in the oven for about 1 1/2 h. or until the internal temperature reach 160°F.

We like the left overs, we eat with various side dishes such as 3 bean salad, sweet potato, pesto veggie pasta ...

Serve it à la you and bon appétit!

Here's how I used the left overs.  I slice and warm it up in a pan with a little butter.


So good!

12/2025 update:
I made 3 loaves this time and cooked them for an hour.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
