Today's masterpiece. You cannot tell but we put julienned carrots on it, we buy them for our dog. So I guess that one is à la Immer :)
Pizza is a very good way to cook à la everyone. This recipe makes 3 pies, so we make 1 all dressed (that's a French Canadian thing), Scott tops his with whatever mood is in that day and 1 cheese or half and half.
Pizza
Ingredients
1/2 cup Warm water
1 teaspoon Sugar
1 Envelope of yeast
(or 1 tablespoon)
3 1/2 to 4 cups Whole wheat flour
1 1/2 teaspoons Sugar
1 1/2 teaspoons Salt
1/2 cup Oil
1 cup Warm milk of choice
1 Egg at room temperature (or 1 tb. chia seed mixed with 3 tablespoons milk)
Directions
Take the egg and the cup of milk out of the refrigerator to warm up.
Put the 1/2 cup of warm water with 1 teaspoon of sugar and 1 tablespoon of yeast in a large bowl, but not your largest, and let rest for 10 minutes.
Add and mix 1 cup of flour, 1 1/2 teaspoons of sugar and 1 1/2 teaspoons of salt and mix to combine. Add 1/2 cup of oil and mix to combine the best you can. Add 1 cup of flour and mix. Add 1 cup of milk, mix. Add 1 cup of flour and mix. Add 1 egg and mix. Add 1/2 cup of flour and mix. Oil your largest bowl and transfer the dough in it. Flip the dough so both sides are oiled. Cover with a warm, damp dish towel and put in the oven with no heat but the light on, for at least 1 hour.
Take the dough out of the oven and preheat to 400°F. (200°C.)
Knead the dough on a floured surface, until it is no longer sticky.
Divide in 3 and roll out it to fit your pans. Spray each pan and each pie with olive oil and cook 5 minutes before topping, for a crispier crust.
Spread a thin layer of your favorite pizza sauce, cheeses, veggies and meat. I like mine with thin slices of pepper, mushrooms, onion and olives. Scott like sausages or meatballs. We both like a mix of mozzarella and cheddar for the cheeses.
Cook for 20 minutes or until desired donness.
October 2020 update, the homemade pizza season has started in our house:
Half à la Scott ( string beans on pizza... why not?) and half vegetarian
Half à la Claudie ( I like crispy pepperoni), half veggies only.
Pizza Sauce
2 tablespoons Olive oil
6 cloves Grated Garlic
1 teaspoon Fresh oregano (if having)
1 teaspoon Dry oregano
1/2 teaspoon Salt and pepper
1/4 teaspoon Red pepper flakes
28 oz. San Marzano whole tomatoes
A pinch of baking soda to balance the acidity.
Directions
Heat the oil on medium, add garlic and cook 30 seconds, then add tomatoes and spices. Break the tomatoes with a potato masher on an angle to avoid getting splashed, then mash. Cook 45 minutes if you have time but it is good right away.
