Salmon cakes



Scott and I don't have the same schedule so we rarely eat together.  There is plenty of food for him in the fridge so I'm cooking for myself tonight.  I love salmon, with this recipe I will have 1 dinner and 4 lunches.

A can of salmon is a good thing to have on hand.  I could make a salad or a pie, which i don't have the ingredients for those right now.  I do have oatmeal and I can make flax eggs so here it is salmon cakes for me tonight.

Salmon cakes

Ingredients

14.75 oz.                                                                Salmon
1 teaspoon                                                            Garlic powder
1 teaspoon                                                            Ginger powder
3/4 cup                                                                   Oatmeal
3/4 cup                                                                   Almond flour
1 tablespoon                                                         Italian seasoning
1 teaspoon                                                            Paprika
1 tablespoon                                                        Parsley
1 tablespoon                                                        Lemon zeste
1 tablespoon                                                        Lemon juice
1 tablespoon                                                        Bbq sauce 
1 tablespoon                                                        Hot sauce
1/2 teaspoon divided                                         Kosher salt
2 tablespoons                                                      Flax seed
1 teaspoon                                                           Olive oil
1 teaspoon                                                           Butter

Directions

In a large bowl combine all the ingredients, except oil and butter.  Form the cakes using a wet 1/4 cup and your wet hands, wetting them for each one.  Heat the oil and  butter on medium heat, when the oil shimmers cook the cakes 4 to 5 minutes on each side, until golden brown.

Fennel and orange salad

Ingredients

1                                                                        Fennel bulb
1                                                                        Navel orange supremes with juice
2 tablespoon                                                   Your favorite salad dressing

Mix all ingredients.

Sometimes I cook à la Claudie,  bon appétit!


The following day I added carrot matchsticks to enjoy longer and it was good.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
