Tortilla pizza



Perfect Week Day Pizza

This one is truly à la Scott.  My man is a pizza lover, well I'd say it's à la Claudie also because I'm French Canadian and we like our pizza all dressed which means with peppers, mushrooms and pepperoni.  To make it palatable  for Scott, I substitute the peppers for string beans and the mushrooms with carrot ribbons.  On the picture the string beans looks like peppers right?

Tortilla pizza

Ingredients

1 tortilla per person
A thin layer of pizza sauce
Mozzarella cheese to taste
1 tablespoon of parmesan
A handful of string beans
A few carrots ribbons, shaved with the peeler
Some kind of meat (optional).  On the picture is sliced homemade left over chicken meatballs from yesterday.



Directions

Preheat the oven to 400°F.

Spray olive oil on a tortilla and put in the oven for 3 mintes to crisp up.  Spread the sauce, the cheeses, the veggies and meat if using.   Cook 10 minutes + 2 minutes on broil, or to desired donness. 

That's a quick fix!

Pizza Sauce

Ingredients

2 tablespoon                                                      Olive oil
4 cloves                                                               Garlic (Scott loves garlic)
2 tablespoon                                                      Minced fresh oregano
1 teaspoon                                                          Dry oregano 
28 oz.                                                                    Whole San Marzano tomatoes 
1/2 teaspoon                                                       Salt
1/2 teaspoon                                                       Black pepper
1/4 teaspoon.                                                      Red pepper flakes 
A pinch                                                                Baking soda

Directions 

Sauté garlic and oregano on medium heat for 30 seconds.  Add tomatoes, other spices and baking soda. Bring to a boil, reduce to medium low and let simmer for 30 minutes or use it, it's good right away.

Mini blueberry cornbread muffins

  MINI BLUEBERRY CORNBREAD MUFFINS    Ingredients  3/4 cup    Milk (evaporated milk works well) 1 tablespoon lemon juice (zest it before juicing it) 1 cup.  Flour 3/4 cup.  Whole wheat flour 1/2 cup.  Yellow cornmeal (I want to try 1/4 c. more) 1/2 cup.   Sugar 2 teaspoons.  Baking powder 2.   Large eggs 1 1/2 teaspoons vanilla Zest of 1 lemon 1 stick.   Salted butter 1 cup.     Frozen blueberries (I want to try 1/4 cup more next time) Directions Preheat the oven at 350°F and set oven rack in the middle.  Combine 3/4 cup of milk with 1 tablespoon on lemon juice and the zest of one lemon in a small bowl (remember to zest it first as you will need it). Meanwhile sift 1 cup of all purpose flour and 3/4 cup of whole wheat one, 1/2 cup of yellow cornmeal and 2 teaspoons baking powder.  Mix.  In a separate bowl mix 1 teaspoon of the dry ingredients to 1 cup of frozen blueberries....
