Date muffins



Moist and delicious, the best healthy muffins I ever had.

Date muffins
Yield 18 muffins

Ingredients

2 cups                                                             Dates
2 cups                                                             Boiling water
2                                                                      Eggs (see note 1)
2 teaspoons                                                   Baking soda
2 teaspoons                                                   Baking powder
2 cups                                                              Flour : I did the following combination:
(1/4  cup                                                         Coconut flour 
1/4 cup                                                            Buckwheat flour
1/2 cup                                                            Almond flour
1 cup                                                               Whole wheat flour) (see note2)
2 cups                                                              All Bran
1/2 cup                                                            Brown sugar or turbinado sugar
1/2 cup                                                            Neutral oil or butter

Directions 

Turn the oven at 350°F.  

I boil the water in my big measuring cup in the microwave then add the dates and mash them with a potatoe masher.  Melt 1/2 cup of butter if it's what you choose to use as fat.

Beat the  2 eggs with the 1/2 cup of brown sugar and 1/2 cup of oil (if it's what you are using for fat), in a big bowl.

Add 1 cup of flour, 2 teaspoons of baking soda and 2 teaspoons of baking powder.  Add half of the date mixture and stir until everything is wet.  Add the last cup of flour and 2 cups of all bran, mix.  Add the remaining date concoction and stir until homogeneous. 

Use the 1/4 measuring cup (oiled) to transfert in a muffin pan, lined with paper cups or greased with butter or oil.

Cook 20 minutes or until a toothpick comes out clean. 

I think it would be good with any dry fruit.  Tell me if you try and bon appétit!

(note 1) : for vegan or eggless people like me today, you can replace 2 eggs with 2 tbsp chia seeds or flax seeds mixed with 6 tbsp liquid (I used 2 tbsp coconut milk and 4 tbsp water.)

(note 2) You need 2 cups of flour all together.  You can use only one or any combination you like.  For muffins I like to use different ones to increase the nutritional benefits. 

At the end of my original, card recipe I left a note that says "double it", because they were disappearing so quickly.  Since I rarely read the recipes till the end before starting cooking, I doubled it here.  It makes 18 muffins.

Mini blueberry cornbread muffins

  MINI BLUEBERRY CORNBREAD MUFFINS    Ingredients  3/4 cup    Milk (evaporated milk works well) 1 tablespoon lemon juice (zest it before juicing it) 1 cup.  Flour 3/4 cup.  Whole wheat flour 1/2 cup.  Yellow cornmeal (I want to try 1/4 c. more) 1/2 cup.   Sugar 2 teaspoons.  Baking powder 2.   Large eggs 1 1/2 teaspoons vanilla Zest of 1 lemon 1 stick.   Salted butter 1 cup.     Frozen blueberries (I want to try 1/4 cup more next time) Directions Preheat the oven at 350°F and set oven rack in the middle.  Combine 3/4 cup of milk with 1 tablespoon on lemon juice and the zest of one lemon in a small bowl (remember to zest it first as you will need it). Meanwhile sift 1 cup of all purpose flour and 3/4 cup of whole wheat one, 1/2 cup of yellow cornmeal and 2 teaspoons baking powder.  Mix.  In a separate bowl mix 1 teaspoon of the dry ingredients to 1 cup of frozen blueberries....
