My dream cake


The fact that I dream recipes made me feel that I should start a food blog.  I've been dreaming of that cake for some years but never took the time to do it.  I guess I needed a pandemic to finally make it come true.

My dream cake

Ingredients 

2 cups                                                               Sugar
1 3/4 cups                                                        Whole wheat flour
1/2 cup                                                             Dark  cacao powder
1 1/2 teaspoon                                                Baking powder
1 1/2 teaspoon                                                Baking soda
1 teaspoon                                                       Salt
2                                                                        Eggs
1 cup                                                                Milk
1/2                                                                    Oil
2 teaspoons                                                    Vanilla extract
1 cup                                                                Boiling water

Directions 

Place the bowl and egg beaters that you are going to use to whip the cream,  in the fridge.

Preheat the oven to 350°F.  Oil and flour two 9 inch round baking pans.  

Beat the eggs, the sugar, milk, oil and vanilla, in a big bowl.  Sift the dry ingredients and add to the egg mixture.  Add one cup of boiling water.  Stir with a spatula until well blended.  

Pour as equally as possible in the two pans.

Bake 30 to 35 minutes or until a toothpick comes out clean.  Cool 10 minutes, remove from the pans and let cool completely on a wire rack. ( I don't have a wire rack so I take out one of the shelf from the oven before heating the oven, and use that).

Filling

1 lb.                                                                       Sliced strawberries 
1/4 cup                                                                  Sugar
1 teaspoon                                                          Neutral gelatine
2 teaspoons                                                        Pineapple or orange juice 

Directions 

Mix juice and gelatin and set aside.

In a small saucepan, combine sliced strawberries and sugar.  Bring to a boil on medium heat, stirring occasionally.   Reduce to medium-low and simmer about 8 minutes.

Add the gelatine mixture and continue simmering and stirring, for about 5 minutes.  Remove from heat and let cool in a colander over a bowl to reserve the juices.

Frosting

Ingredients 

1 1/4 cups                                                      Whipping cream
1 cap full                                                       Vanilla
2 tablespoons                                              Powder sugar
Grated dark chocolate to taste.

Directions 

Whip thight all ingredients except the chocolate, stop right before it turns into butter.

Assembling 

Place one cake upside down on your platter.  Pour half of the strawbwerry juice evenly on the cake, then spread the strawberries.  Spread a layer of whipped cream. 

Place the other cake upside up.  Pour the remaining juice.  Cover with the remaining cream.  Decorate liberally with grated dark chocolate (optional but delicious).

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
