Lentil burger with blue cheese



I'm not vegetarian but I think we eat too much meat.  I make peace with my love for animals and my love for meat by cooking more and more plant based proteins and my husband enjoys most of them too.

Lentil is one of them and is a good substitute for ground meat.  I make loaf with them and burgers.  Here's a successful new flavor I tried out.
 
Lentil burger with blue cheese 

Ingredients 

2 cups                                                                   Lentils 
About 4 cups                                                      Vegetable stock
2                                                                             Eggs
About 3/4 cup                                                     Bread crumbs
1 tablespoon                                                      Montréal seasoning
1/4 teaspoon                                                       Red pepper flakes
5 oz.                                                                       Blue cheese crumbles
1                                                                             Scallion
2                                                                             Grated garlic

Directions 

Boil the lentils in stock for about 1/2 hour or according to package directions. (I didn't measure the stock and just cover the lentils + 1 inch and they were too dry, so I added some afterward).

Drain if necessary,  mash a little using a potatoe masher.  Let cool.

In a large bowl, mix the 2 eggs, 3/4 cup of bread crumbs, 1 tablespoon of Montréal seasoning, 1/4 teaspoon of red pepper flakes, 5 oz. of blue cheese, 1 scallion and 3 grated garlic.  Add the cooled lentils ( I cooked them in the morning).  If it's too dry add liquid, if it's too wet add bread crumbs. 

Form 8 patties, using a well wet 1/2 measuring cup and well wet hands.

Cook on medium heat about 5 minutes on each side, with a little bit of butter and oil.

Serve as burgers in a bun or as you wish but don't forget your veggies.  Serve them à la you, be healthy and bon appétit!

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
