Lentil pasta soup



I don't know why we put a cheesy crouton only on top of French onion soup, I think most soup deserves one.
Lentil pasta soup

Ingredients 

4                                                                            Diced carrots
3 cups                                                                  Cut string beans 
2                                                                            Scallions 
1 cloves                                                                Garlic
A box                                                                   Vegetable stock
14.5 oz.                                                                 Fire roasted diced tomatoes 
1 tablespoon                                                      Basil
1 teaspoon                                                         Oregano 
Salt and pepper to taste.
Half a box of lentil pasta.
Chives.

Directions 

Saute the carrots about 7 minutes on medium heat, add the string beans and cook 5 minutes.  Add the scallions, garlic, 1 tablespoon of basil, 1 teaspoon of oregano, salt and pepper to taste.

Add the whole box of stock, the can of tomatoes, bring to a boil,  add half of a box of the lentil pasta.  Bring back to a boil, reduce to medium, cover half way and let cook about 10 minutes or until the pasta is cooked.

Meanwhile place 1 slice of bread per person in the toaster oven to 350° F., after 5 minutes, flip and top with a slice of cheese.

Ladle the soup in bowls, top with a crouton and chives.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
