I hate wasting food, it's in my DNA. On a zoom family meeting we were making fun of ourselves and saying that when we throw away a jar only if it's really empty. My uncle Jean-Luc was telling us that when he was growing up, his mom ( my grandma) was instructing him to srape the shell of eggs. I waste food, I don't scrape egg shells! OMG.
Anyway today I have mashed potatoes that I don't want to go bad so I'm making vegan patties out of it. I'm adding proteins by using nutritional yeast and chia seeds.
Vegan veggie patties
Ingredients
1 cup Left over mashed potatoes
1 Scallion
1 Scallion
3 tablespoons Nutritional yeast
1 tablespoon Chia seed
1/2 cup (divided) Bread crumbs
1/2 pinch Cayenne pepper
1/2 pinch Cayenne pepper
1 tablespoon Oil
Salt and pepper to taste.
Directions
First I have to tell you that I make mashed potatoes with carrots, vegetable stock and, sometimes, turnip.
Mix all the ingredients except 1/4 of the breadcrumbs. Form 2 large patties or 4 small ones, roll them in the remaining 1/4 cup of breadcrumbs, spread on a plate.
Brown in a pan with a little oil, about 3 minutes on each side on medium heat.
I thought I would eat the 2 patties but one was enough for me.
