Healthy Calzone with roasted veggies

Ingredients 

1 batch of pizza dough
5 cups                                                                 Diced Veggies (I use carrots and string beans)
3/4 cup                                                               Cottage cheese
1/4 cup                                                               Cheddar
1/2 cup                                                                Mozzarella (optional) 
3 or 4 cloves                                                     Garlic, divided
2 tablespoons                                                   Chives, divided
30 slices                                                              Pepperoni (optional) 
1 tablespoon                                                     Pecorino or parmesan (optional)
1/2 teaspoon                                                      Salt
Black pepper to taste
1 cup                                                                   Marinara sauce (or 3 big tomatoes)


Directions 

Preheat the oven and a sheet pan at 450°F. (230°C.)


Take the sheet pan out of the oven and spray with oil.  Spread the carrots in one layer with 1/4 teaspoon of salt a pinch of black pepper.  Cook for 5 minutes.  Add the string beans with 1/4 teaspoon of salt, a pinch of black and red pepper, cook 5 more minutes. 

If using tomatoes :

Move the string beans with the carrots, sprinkle half of the garlic and move and flip them.  Add the tomatoes cut in 8 segments to the other side with 1/4 teaspoon of salt, black pepper to taste, 1/4 teaspoon of red pepper flakes and the other half of the garlic.  Cook 10 minutes, the 4 last minutes on broil.

Shut off the oven, take the veggies out and let cool.

Mix with 3/4 cup of cottage cheese,  1/4 cup of cheddar,1 tablespoon of chives and the veggies.

Divide the dough in 3 by making a Y with your hands or a spoon, then divide them in 2.


 Roll each part on a floured surface in about 8 to 10 inch circle.  Spray a baking sheet with oil and place the circles on it.  Cover the middle part with mozzarella if using, then 1/6 of the veggie mixture and 5 slices of pepperoni if using.  Wet your fingers and wet the edge of the dough, fold over, press down and fold back, pinching shut one time or 2.  Pierce the top with a fork, spray with olive oil and sprinkle with a little bit of parmesan or pecorino. 



Preheat the oven to 400°F. (200°C.) and cook 20 minutes.

Put the tomatoes in the blender with 1 raw clove of garlic and 1 tablespoon of chives.  Deglaze the pan with 1/8 cup of red wine and poor in the blender.  Blend 20 seconds, taste and adjust seasoning if necessary.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
