Healthy pumpkin muffins



Soft, no sugar added, delicious and satisfying. 

Yield 18 muffins.

Healthy Pumkin Muffins

Ingredients 

2 cups                                     Dates
2 cups                                     Hot water
1 cup                                       Pumpkin puree
1/4 cup                                    Oil
2 cups                                     All Bran
1 cup                                       Almond flour
1 cup                                       Whole wheat flour
2 teaspoons                            Baking soda
2 teaspoons                            Baking powder
2 teaspoons                             Cinnamon 
1/2 teaspoon                           Turmeric (optional) 
A few grind of black pepper (optional) 

Directions 

Preheat the oven to 350°F. (175°C.)

Put the 2 cups of dates in a big bowl and poor the same amount of hot water.  Crush with a potatoe masher, add 1/4 cup oil, 1 cup of pumpkin and mix well.  Add the 2 cups of bran and mix well.  Add the 1 cup of almond flour and mix,  the 1 cup of wheat flour, the 2 teaspoons of baking soda, 2 teaspoons of baking powder, 2 teaspoons of cinnamon, 1/2 teaspoon of turmeric (if using), a few grind of black pepper (if using) and mix just to combine.  

Oil or line muffin thins and bake 20 minutes or until a toothpick comes out clean.   

Store bought muffins are too sugary and not nutritious, they are cake to me.  My muffins are healthy, yet delicious and filling.  The sweetness comes from the dates, the softness from the pumpkin and the satisfaction from the almond and whole wheat flour.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
