Banana muffin bites


 

Great for munching on in the car.

Banana muffin bites 

Ingredients 


4                                                                            Small bananas

1                                                                            Egg

1/8 cup                                                                Canola oil 

1/2 cup                                                                Turbinado sugar

1/4 cup                                                                 Oat bran

1/4 cup                                                                 Tapioca flour

1/4 cup                                                                 Corn meal 

3/4 cup                                                                 Unbleached flour 

3 teaspoons                                                         Baking powder 

About 1/4 cup                                                     Walnut

A pinch of kosher salt and Cinnamon to taste (optional)


Directions 


Preheat the oven at 350°C. (175°F.)


Mash the bananas with a potatoe masher, add the egg and combine.  Add the 1/ 8 cup oil and 1/2 cup sugar and combine. Add the 1/4 cup tapioca flour,  1/4 cup oat bran, 1/4 cup corn meal and combine between each addition.  Add 3/4 cup unbleached flour,  3 teaspoons baking soda and stir until everything is incorporated.   

Spoon on a baking sheet lined with parchment paper,  using a teaspoon.   Place one piece of walnut on top of each bite muffin.

Bake for 12 minutes, sprinkle with cinnamon if you want, bon appétit and have a nice and healthy day!

2/1/2025 update:

This time around I didn't have that much of different flours but I have my favorite, King Arthur whole wheat.   I used 1 cup of it and 1/2 cup of almond flour.  The idea is 1 1/2 cup of flour (I like to use different ones for getting different health benefits).  I believe in viarity.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
