Scrumptious pumpkin granola


Perfect for a distance Christmas morning.

During covid, I mailed them to my family and  suggested to make parfait with it.

This year I'm planning to make them at my parents'.  They filled the house with such a wonderful aroma.


Scrumptious pumpkin granola

2 1/2 cups                                                 Oatmeal
1/2 cup                                                      Chopped pecans 
1/2 cup                                                      Pepitas *
1/2 cup                                                      Pumkin puree
1/2 cup                                                      Maple syrup
1 tablespoon                                             Oil
2 teaspoons                                              Pumpkin pie spice *
1 teaspoon                                                Vanilla
1/2 cup                                                       Dry cranberries 
A pinch of salt

Directions 

Place one grate of the oven in the lower slit and one in the upper one.  Preheat the oven and a baking sheet to 325°F.(160°C.)

Put 1/2 cup of pumkin, 1/2 cup of maple syrup, 2 teaspoons of pumkin pie spice, 1 tablespoon of oil and 1 teaspoon of vanilla in a sauce pan.  Bring to a boil on medium heat, stirring often.

In a large bowl mix 2 1/2 cups of oatmeal with 1/2 cup of pecans and 1/2 cup of pepitas.

When the pumkin mixture comes to a boil, turn off the heat and stir for one more minute.  Pour into the dry mixture, combine and transfert to the hot baking dish.

Bake for 15 minutes on the lower grate and bake another 15 minutes on the upper one.  Turn off the heat, flip one more time, return to the off oven and let the door open to dry and cool completely. 

Add 1/2 cup of dry cranberries.  Transfert to treat bags to send away or store for yourself.

For the parfait, layer 1/4 cup of plain Greek yogurt,  2 tablespoons jam and 1/4 cup granola and repeat.  If you are interested in my cranberry and mandarin jam, click below:

* I used 1 cup of mixed nuts this year, instead of pecans and pepitas, because it's what I had. Sometimes I use sunflower seeds instead of pepitas and raisins for cranberries.  Make it à la you and have a happy holiday season!

11/10/2024 update :



I make my granola into bite size nowadays.  I forgot to add the dry cranberries before forming... oh well it's good anyway.   I used an oiled cookie scoop and my left hand to form the balls.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
