Breakfast apple pie

 BREAKFAST APPLE PIE
(With pumkin granola)

2 cups                                                         Popcorn
1/2 cup                                                      Pumpkin puree
1/4 cup                                                       Maple syrup
1 tablespoon                                             Coconut oil
2 teaspoons                                              Pumkin spice
1 teaspoon                                                Vanilla
2 cups                                                        Old fashioned Oatmeal
1/2 cup                                                       Pecan
1/2 cup                                                       Sunflower seeds
1 pie shell
6                                                                   Apples, peeled and sliced
1 tablespoon                                             Sugar
1 teaspoon                                                 Cinnamon
1 pinch                                                       Salt

Directions

Put 2 cups popcorn in a big bowl.  Put 1/2 cup pumpkin puree, 1/4 cup maple syrup, 1 tablespoon coconut oil, 2 teaspoons pumpkin spice and 1 teaspoon vanilla in a sauce pan on medium heat, stirring until it boils.  When it does, turn off the heat and keep on stirring for a minute.  Transfert to the bowl with the popcorn.   Fold until combined.

Add 2 cups oatmeal,  1/2 cup pecan and 1/2 cup sunflower seeds.

Preheat the oven to 400°F.(200°C.)

Roll out the pie dough (I like mine thin).  Place on your pie dish.

Peel and slice 6 apples (I used Gala), dropping the slices directly in the pie shell.  Sprinkle 1 tablespoon sugar, 1 teaspoon cinnamon and a pinch salt.

Spread 2 cups of the fresh granola you just made on top.  Put the left over granola on a baking sheet.

Put the pie on the second lower grate of the oven and the granola on the lower one, for 10 minutes.

After 10 minutes, take the granola out and flip it with a spatula.  Switch the pie to the lower grate and place the granola on the second lower grate for 10 more minutes or until cook.  Don't let the granola burn.

Look at that beauty.  Just like in my dream.  I happened to have a pie shell left over in the freezer from my vegan cipâte.   I'm sure it would be good without it.  Maybe between 2 layers of granola.  Let me know if you try it, I love talking about food.

I enjoyed mine with Greek yogurt sweetened with maple syrup and a coffee.

Have a good and healthy day!

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
