Starry night foccacia bread
Ingredients
1 envelop (1 tablespoon) Yeast
2 cups Warm water
1 teaspoon Sugar
1 1/2 teaspoons Salt
4 cup Unbleached flour
1/2 cup Olive oil
3/4 cup Crumbled blue corn tortilla chips
1 clove Garlic, sliced
Black garlic from a jar
Cut up pieces of jicama soaked in water and turmeric for the moon and stars.
Directions
Mix the 1 tablespoon yeast with 2 cups of warm water and 1 teaspoon sugar. Wait 2 minutes and see if it bubbles.
If so add 1 cup flour, 1 1/2 teaspoon salt and mix with a spatula. Add another cup flour and mix. Add a third cup flour and mix the best you can. Add 1/2 cup oil and incorporate. Add a fourth cup flour and mix.
Add 2 to 3 tablespoons warm water and add 1/2 cup crumbled tortilla chips (I crushed them in a ziploc bag with a rolling pin). At this point the dough should be soft and not sticky. Oil the bowl, cover with a towel wet with warm water. Put in the oven with the heat off and the light on, or a warm place. Let rise for at least an hour.
Meanwhile cut thin slices of jicama or potatoes and cut out shapes for the moon and soak it in water mix with a pinch of turmeric, salt and white pepper. Slice a garlic clove, you need some rond ones for the stars and some square ones for the windows.
Cut more slices of jicama and cut out 3 houses, a church and a circle bigger than the moon. Soak in salty water.
After at least an hour, take off 1/4 cup of the dough, add 1 teaspoon water then about 1/4 cup tortilla chips. Drop the big part on a baking sheet, lined with parchment paper. Spread it the most you can to fit the sheet.
Roll the "blue" remaining dough and roll it in a long strip. Cut in 2. Use 1 long strip to outline the hilly landscape and a shorter one for a twist in the sky. Add 1 teaspoon black garlic juice and roll in more blue chips. Twist and seperate in 3 to make the tree. Separate 1 piece and shape it in a thin disk a little bigger than the white jicama circle. Wet the area where you want to put it, place and press down. Place the white circle of jicama on top, then the moon. Do more disks and put a round slice of garlic on top for the stars.
Press down the houses and the church in the landscape, add the square garlic pieces for the windows.
Make the tree with 3 strips of blue dough. Paint the tree and the right hill with some black garlic. Press some blue chips in the lower part
I think it's pretty and it tastes great. The blue corn tortilla chips gives an interesting texture and flavor.
The pandemic makes me discover my creativity. I would like to see picture of your creation if you try it.
Let rise for at least one hour. Then preheat the oven to 450°F., spray with olive oil and cook for 25 minutes or until golden.
"Starry night" is my husband favorite painting. I made this foccaccia for his birthday. If you try it or another decoration, I would like to see your creation. Birthdays don't have to be cake don't you think?
Update:
Yesterday creation.
I couldn't find black garlic and it affected the look but I sprayed with garlic flavored olive oil and it was very good.
I wonder if I used soy sauce instead of salt and molasses instead of sugar... maybe I'll try next time.
