Pumpkin pie with coconut milk, maple syrup and pecans.

 


PUMPKIN PIE WITH COCONUT MILK, MAPLE SYRUP AND PECANS

Light ,smooth and tasty.

Ingredients 

1 can                                                                   Pumpkin
A shy 1/2 cup                                                   Coconut milk
A shy 1/2 cup                                                   Maple syrup
1/2 cup                                                              Pecans, chopped
1 1/2 teaspoons                                               Pumpkin pie spice
1 teaspoon                                                        Vanilla
3                                                                          Egg whites
1                                                                          Whole egg  
1                                                                          Pie shell 

Directions 

Preheat the oven to 400°F (200°C.).  Mix all the ingredients except the pecans, pour most of it in a pie shell.  Add the pecans to the little bit of the pumkin mixture left in the bowl, stir to coat all the nuts and spread evenly on top of the pie.  Bake for 25 minutes or until set.
