Crepes

 




CREPES 

Easy recipe, they can be sweet or savory.  Stuff them as you wish.

Ingredients 

1/4 cup                                                                Whole wheat flour
1/4 cup                                                                White flour *
1 teaspoon                                                          Baking powder
1/2 teaspoon                                                       Salt
1 teaspoon                                                          Orange zest (optional) 
1 teaspoon                                                          Vanilla (optional) 
1 cup                                                                    Milk of choice
3                                                                            Large eggs

Directions 

Mix together the flours, baking powder and salt.  Add the milk a little at a time to avoid lumps.  Add eggs one at a time and beat well after each one.

Cover the bottom of a medium size pan with vegetable oil.  When you see the oil shivering wait 2 more minutes then pour 1/4 cup of the batter, tilting the pan to spread evenly.  Cook the first side about 2 minutes or until visibly set, then 1 minute on the other side or until golden brown.  As the pan gets hot you might want to lower the heat to medium.  Add little oil after two or three crêpes. Yield 8 crêpes therefore 4 servings.

I tried with different milks, my new favorite is soy because it's more filling.  I want to try to make it vegan, then gluten free... pumkiny... I see a lot of crêpes in my futur.

I also tried different filling, today I had one with kiwi and walnuts and the other one with mandarin and walnuts, very satisfying. Oh! I almost forgot to mention, a little bit of maple syrup. (It goes without saying for a French Canadian)

Update (November 28, 2021) :

 

Today I stuffed it with pumpkin yogurt and mandarin on the side.  Scott had peanut butter... so good.

* or 1/2 cup fo flour of your choice.  I prefer King Arthur whole wheat but nowadays my grocery store don't have it.

Mini blueberry cornbread muffins

  MINI BLUEBERRY CORNBREAD MUFFINS    Ingredients  3/4 cup    Milk (evaporated milk works well) 1 tablespoon lemon juice (zest it before juicing it) 1 cup.  Flour 3/4 cup.  Whole wheat flour 1/2 cup.  Yellow cornmeal (I want to try 1/4 c. more) 1/2 cup.   Sugar 2 teaspoons.  Baking powder 2.   Large eggs 1 1/2 teaspoons vanilla Zest of 1 lemon 1 stick.   Salted butter 1 cup.     Frozen blueberries (I want to try 1/4 cup more next time) Directions Preheat the oven at 350°F and set oven rack in the middle.  Combine 3/4 cup of milk with 1 tablespoon on lemon juice and the zest of one lemon in a small bowl (remember to zest it first as you will need it). Meanwhile sift 1 cup of all purpose flour and 3/4 cup of whole wheat one, 1/2 cup of yellow cornmeal and 2 teaspoons baking powder.  Mix.  In a separate bowl mix 1 teaspoon of the dry ingredients to 1 cup of frozen blueberries....
