                                                      (or 1 tablespoon dry)
1 tablespoon                               Minced fresh oregano
                                                       (or 1 teaspoon dry)
2                                                     Bay leaves
1 can (28oz.)                                Crushed tomatoes
1/4 teaspoon                                Red pepper flakes
3/4 teaspoon                                Salt, pepper to taste.

Directions

Saute carrots in oil on medium high 5 minutes, then add string beans.  Let cook 2 minutes then add the dry spices if it is what you are using ( 1 tablespoon of parsley, 1 tablespoon of basil, 1 teaspoon of oregano, 1/4 of red pepper flakes and 1/2 teaspoon of salt and pepper.  Add the scallions and garlic and let cook for 30 seconds.  Add the 1/2 cup of wine, 1/2 cup of vegetable stock, the can of tomatoes and the 2 bay leaves.  Bring to a boil then reduce to a simmer and let cook uncover for 45 minutes.

Add fresh herbs at the end if it is what you are using, 1/3 cup of parsley, 2 tablespoons of basil and 1 tablespoon of oregano.

You could crush the veggies very small in a food processor, I like to see what I eat.

Most people would use celery, pepper and onion, make it a la you and Bon appetit!
