American pumpkin tiramisu



 AMERICAN PUMPKIN TIRAMISU

A no bake dessert with easy to find ingredients 

Ingredients 


9 1/2                                                                 Graham crackers 

2 tablespoons                                                 Instant coffee 

1/4 cup                                                             Hot water

8 oz.                                                                 Cream cheese (room temperature) 

1 cup                                                                Pumpkin

3 tablespoons                                                 Maple syrup

2 teaspoons                                                    Pumkin pie spice (or cinnamon)

1 1/2 cup                                                         Whipping cream 

2 tablespoons                                                 Powdered sugar

2 teaspoons                                                    Cinnamon + more for dusting on top


Directions

Take the cream cheese out of the fridge, I do it the night before.  Place a big bowl and beaters in the fridge for whipping the cream.  Layer 4 1/4 Graham crackers in the bottom of a 8×8 dish.  Heat 1/4 cup of water and dissolve 2 tablespoons of instant coffee in it.

Combine 1 cup cream cheese with 1 cup pumpkin, 3 tablespoons maple syrup and 2 teaspoons pumpkin spice (or cinnamon) until smooth, using a fork and/or a spatula. Add the coffee and spread over the crackers.

Make another layer of crackers. 

Whip 1 1/2 cup of cream with 2 tablespoons powdered sugar and 2 teaspoons vanilla,  until soft peaks.  Spread over the crackers.

Dust a pinch of cinnamon using a sifter for decoration.

I love tiramisu but my regular grocery store doesn't have lady fingers nor mascarpone so with this recipe I can make it more easily.  Also I love pumpkin and it is American so it's why I call this recipe American tiramisu. It is so good, it tastes like a pumpkin spice latté.

P.S. If you don't like coffee, you could leave it out or substitute with cocoa powder.

October 2022 update:



This time around I decorated with grated chocolate covered expresso beans.  I like the taste and the aroma.  I think next time I'll sprinkle some over each layer of crackers.
