Breakfast Pumpkin Tiramisu



BREAKFAST PUMPKIN TIRAMISU 

Ingredients 

4 to 6                                                                Slices of bread
1 cup                                                                Boiling water
1 tablespoon                                                   Instant coffee 
1 teaspoon                                                      Sugar
1/4 cup                                                             Peanut butter 
1 cup                                                                Pumpkin (divided)
3 tablespoons                                                 Maple syrup (divided)
2 teaspoons                                                     Pumpkin pie spice
1/2 cup                                                             Plain Greek yogurt
2 teaspoons                                                     Cinnamon ( + more for the top)

Directions 

Spread 2 or 3 slices of bread in a 8 × 8 dish, you might have to cut some to fit a layer.  


Boil 1 cup of water and dissolve 1/4 cup of instant coffee in it with 1 teaspoon of sugar.  Pour evenly half of it over the bread.


Warm up the 1/4 cup  peanut butter in a sauce pan over medium heat with 1/2 cup pumpkin, 2 teaspoons pumpkin pie spice and 1 tablespoon of maple syrup, mix well until it reaches a spreadable consistency. Pour evenly over the bread.

Make another layer of bread, pour the remaining of coffee over it.  Mix together 1/2 cup of pumpkin, 1/2 cup of yogurt, 2 teaspoons of cinnamon and 2 tablespoons of maple syrup.  Spread over the second layer of coffeed bread, top with a sprinkle of sifted cinnamon.   Let chilled in the fridge for at least an hour.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
