Vegan creton

 Made with cauliflower, walnut and quinoa 

Vegan creton
Creton is a French Canadian spread traditionally made with pork.

Ingredients 

1/2                                                          Cauliflower head
1 cup                                                      Walnut
1/2 cup                                                   Soy milk
1/2 cup                                                   Water
1/2 cup                                                   Quinoa
1/2                                                           Onion, diced
1                                                              Garlic clove
1/2 to 1 teaspoon                                  Seasoned  vegetable  Base 
1/4 teaspoon                                         Salt  
1/8 or more teaspoon                         Cinnamon
1/4 teaspoon                                         Nutmeg 
1/4 teaspoon                                         Ginger
Half a pinch                                         Cayenne 
Freshly ground black pepper to taste. 

Directions 

Bring to a boil 1/2 cup of water, 1/2 cup of soy milk, 1/2 or 1 teaspoon of vegetable base and 1/4 teaspoon salt to a boil in a large pot.  Add 1/2 cup quinoa, 1/2 cauliflower cut in florets, 1 cup of walnut, 1/2 an onion and 1 garlic clove.  Bring back to a boil and reduce to simmer for 15 to 20 minutes, until the liquid is absorbed. 

Transfert to your food processor, blend until smooth (food processor is better than the blender here).  Let it cool completely, transfered to a air tight container and store in the fridge. (It freezes well too).

It's good on toasts in the morning or in a sandwich with mustard.  My American co-worker liked it and asked me for the recipe.  Give it a try you might like it as well.  Let me know if you do.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
