Banana muffin recipe

Time : 50 minutes  ( I'm a little slow, especially in the morning 😀) 

Cooking time : 25 minutes

 BABANA MUFFINS


One of my co-worker's husband said that was the best banana muffin he ever had.  So I thought I should share my recipe. Here it is :

Ingredients

3                                                                             Bananas (fresh of frozen) * (see note)

1/8 cup                                                                  Oil

1/4 cup                                                                  maple syrup 

1                                                                             Egg (well beaten)

1 cup                                                                     Whole wheat flour 

1/4 cup                                                                  White flour

1/4 cup                                                                  Nut flour 

1 teaspoon                                                            Baking soda

1 teaspoon                                                            Baking powder

1/4 cup                                                                  Small pieces of walnut


Directions 

Preheat the oven at 350°F.(175°C.)

Mash the 3 bananas with a potatoe masher, add the 1/4 cup of maple  syrup then the well beaten  egg. Mix well. Add 1 cup of whole wheat flour, 1 teaspoon each of baking soda and baking powder. Add 1/8 cup of oil. Mix to combine and add 1/4 cup of white flour then 1/4 cup of nut flour.  Mix until everything is blended.

Fill your muffin pan half way and sprinkle half of the walnut.  Repeat.

Bake 25 minutes or until a toothpick comes out clean.

* Note : Don't let bananas go bad.  Slice them and freeze them for muffins, smoothies or nice cream.

I made them mini this time, they cooked in 14 min.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
