Braised chicken

Ingredients

2 teaspoons                                                             Vegetable base

2 teaspoons                                                             Water

1                                                                                Whole young chicken

1/4                                                                             Onion

2                                                                                Cloves of garlic, smashed 

Some                                                                        Celery ends

Black pepper to taste. 

Directions 

Preheat the oven at 450°F.

Pat the chicken dry with paper towels. Fill the cavity with the onion, garlic and celery.  Fennel, orange or lemon and herbs is also nice.

In a little bowl mix 2 teaspoons of vegetable base with 2 teaspoons of water and blackpepper. Poor and spread all over the chicken. 

Cook for 15 minutes, uncovered. Then lower the heat to 250°F. cover and cook 1 h. Add carrots, turnip and potatoes cut in medium size pieces and cook one more hour or until cooked through. Uncover and broil for 3 to 4 minutes.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
