Healthy carbonara pasta

 HALTHY CARBONARA PASTA

 

Ingredients 


4                                Eggs

1 1\2 cups                Pecorino Regiano cheese (or parmesan)

3/4 cup                     Linguini (or spaghetti) 

About 3 cups           Shredded carrots 

1 can                         French cut string beans

1/2 cup                     Cooking water

8                                 Slices of cooked bacon

Directions 

1. Cook the pasta according to package directions, adding the water from the can of string beans to the regular water (there's vitamins and flavor in there)

2. Beat the eggs in a big bowl, add the cheese and mix to combine.

3. Two  minutes  before the pasta is cooked add the shredded carrots, one minutes later add the can string beans.

4. Reserve 1/2 cup of cooking water.  Drain the pasta.

5. Get the bacon crispy a minute if you want then bring the pasta back in the pot.

6. If you can ask for help here because that's the important part.  Have someone dump the pasta in the egg mixture and stir vigorously right away with a wooden spoon to avoid the eggs to scramble (that wouldn't be a disaster, it would taste good but the texture wouldn't be creamy). (If you're alone you can temper the eggs with a little bit of cooking water).

7. Adjust the consistency of the sauce by using cooking water and/or cheese.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
