 Orange and ginger granola bites

Ingredients 

1/4 cup                                                          Peanut butter 

1 tablespoon                                                Flax or chia seed

2 tablespoons                                              Orange juice 

The zest of one orange

2 teaspoons                                                   Freshly grated ginger (or 1 teaspoon dry)

1/4 cup                                                            Molasses 

1 cup                                                               Pecan, walnut or almond

1 cup                                                                Lightly salted pepitas or sun flower seed

1/4 teaspoon                                                   Turmeric (optional)

Few grind of black pepper and a pinch of salt

Directions 

Put one grate of the oven on the top and one on the bottom.

Preheat the oven at 350°F.

Make peanut butter by mixing peanut butter with zest, ginger, turmeric, salt and pepper. Mix 1 tablespoon of flax or chia seed and 2 tablespoons of orange juice in a little bowl and let rest 5 minutes.   Meanwhile gather the other ingredients then add them. Mix well and use the 1/4 cup to create bite size clusters or use mini muffins mold.

Cook 10 minutes on the bottom self of the oven and 10 minutes on the top one.  Let rest 5 minutes and enjoy. It is so satisfying,  just one is a breakfast for me.

* note : I think next time I'll use the juice of the orange instead of water and maybe the chopped pulp as well (I hate wasting fibers).  

** note : I'm sure whole almond would work too.

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
