Vegan veggie patties

I hate wasting food, it's in my DNA.  On a zoom family meeting we were making fun of ourselves and saying that when we throw away a jar only if it's really empty.   My uncle Jean-Luc was telling us that when he was growing up, his mom ( my grandma) was instructing him to srape the shell of eggs.  I waste food, I don't scrape egg shells! OMG.   Anyway today I have mashed potatoes that I don't want to go bad so I'm making vegan patties out of it. I'm adding proteins by using nutritional yeast and chia seeds. Vegan veggie patties Ingredients  1 cup                                                                  Left over mashed potatoes 1                                                                          Scallion  3 tablespoons                                                  Nutritional yeast  1 tablespoon                                                    Chia seed 1/2 cup (divided)                                            B

Update (7/20/2020) I made it even healthier by adding veggies.  The string beans melted away, added juice and thickened the sauce.  I also cook small potatoes on top and mashed 4 of them. I think I could add almost any vegetable but i won't take a chance.  Scott's verdict : " It's really   good!" I like to make it before going on a boat trip.  Scott makes wraps out of it and I make sandwiches, salad or I complement it with whatever side dish I have.  I even make Chinese fried farro sometimes, sounds weird but it's good. Three bean salad Ingredients  14.5 oz.                                                                   Wax beans (fresh if you have them) About 3 cups                                                         Fresh string beans 14.5 oz.                                                                   Black beans About 2 tablespoons                                           Olive oil and lemon dressing Directions  When I used canned wax bean , I boiled the string beans in the wax bean water, 2 minutes, covered.  I like them crunchy.  I drain them, put them back in the pot, add the wax beans, rinsed black beans and dressing.  I mix them gently and transfert to a serving bowl or storage container.  It is good at room temperature or cold.  Olive oil and lemon dressing Ingredients  2 cloves                                                               Grated garlic 1 tablespoon                                                      Greek seasoning  (I

Strawberry orange smoothie with cottage cheese

It is so refreshing, filling and satisfying.  This smoothie makes me chew so I feel that I am eating and I like that, then I have energy all morning. Strawberry orange smoothie with cottage cheese (Yield 2 servings) Ingredients  1                                                                             Carrot  1 cup                                                                     Fresh strawberries  1 cup                                                                     Frozen mixed fruits 1/2 cup                                                                 Oatmeal 4 oz.                                                                      Cottage cheese 1 tablespoon                                                       Chia seeds 2 tablespoons                                                     Peanut butter 1/2 teaspoon                                                       Turmeric (good for inflammation)  A little bit                                                       

Fruity smoothie with cottage cheese and maple syrup

I had expired cottage cheese so I used it in my smoothie this morning and it's a keeper. Fruity smoothie with cottage cheese and maple syrup Ingredients  1/4 cup                                                               Oatmeal 3/4 cup                                                               Frozen mixed fruits 4 oz.                                                                    Cottage cheese 1 or 2 tablespoons                                           Maple syrup About 1 cup                                                      Milk of choice ( I used soy) Blend away and enjoy!   Let me know if you try it.
