Chinese two ways

Sometimes Scott is annoyingly indecisive.  We decided to cook Chinese tonight, with ground beef.  He said he doesn't want pasta like we usually do, just meat and veggies.  I said o.k I'm making myself rice (which he doesn't like).  Five minutes later he decided he wanted gluten free pasta.  So here it is Chinese fried rice and/or pasta, I call it, Chinese two ways. Chinese two ways Ingredients 1 tablespoon                       oil 1 1/2 lbs.                               ground beef 5                                             diced carrots  1 1/2 cups                             diced string beans 3 cloves                                 garlic A bunch                                chives 1/4  cup or more                  soy sauce 1/2 teaspoon                         fish sauce 1/2 teaspoon                         ginger  1/2 teaspoon                         five spices A zigzag                                 siracha 1 teaspoon 

Turkey meatloaf

Turkey meatloaf Light, flavorful, wonderful as left over too. Ingredients  2 cups                                                                 grated carrots  1 cup                                                                   oatmeal 1/4 cup                                                               fennel (optional)  1/2 cup (ddivided)                                           BBQ sauce 1                                                                          egg 4 to 8 cloves                                                      garlic (my husband loves garlic) 3 lbs                                                                    ground turkey 1/2 teaspoon                                                     red pepper flakes Salt and pepper to taste Directions  Preheat the oven to 375°F. (190°C.) In a big bowl, mix the ingredients except the turkey and 1/4 cup of BBQ sauce with a spatula.  Add the meat and combine.  Transfer on a b

Pizza

Today's masterpiece. You cannot tell but we put julienned carrots on it, we buy them for our dog.  So I guess that one is à la Immer :)  Pizza is a very good way to cook à la everyone.   This recipe makes 3 pies, so we make 1 all dressed (that's a French Canadian thing), Scott tops his with whatever mood is in that day and 1 cheese or half and half. Pizza Ingredients  1/2 cup                            Warm water 1 teaspoon                      Sugar 1                                        Envelope of yeast                                              (or 1 tablespoon) 3 1/2 to 4 cups               Whole wheat flour 1 1/2 teaspoons              Sugar 1 1/2 teaspoons              Salt 1/2 cup                             Oil 1 cup                                Warm milk of choice 1                                       Egg at room temperature (or 1 tb. chia seed mixed with 3 tablespoons milk) Directions  Take the egg and the cup of milk

Salmon cakes

Scott and I don't have the same schedule so we rarely eat together.  There is plenty of food for him in the fridge so I'm cooking for myself tonight.  I love salmon, with this recipe I will have 1 dinner and 4 lunches. A can of salmon is a good thing to have on hand.  I could make a salad or a pie, which i don't have the ingredients for those right now.  I do have oatmeal and I can make flax eggs so here it is salmon cakes for me tonight. Kielbesa penne

We like left overs, they are great for lunches and tired evenings.  This recipe yield 7 servings. I had to divide the sauce in the pasta pot to be able to mix the pasta in. Kielbesa penne Ingredients 1                                 Sliced Kielbasa 2 tablespoon            Olive oil 7                                 Sliced carrots 1 cup                         String beans (a can is ok) 1                                 Diced fennel 28 oz.                        Crushed tomatoes 2 cloves                    Garlic A pinch                     Chives A pinch                     Black pepper A splash                    Vegetable broth About 16 oz.             Whole wheat penne 1/2 cup                      Pasta water Directions  Warm olive oil on medium heat in a big pot.  Brown the kielbasa slices until brown.  Put them aside and sauté the carrots 5 minutes, add the fennel and cook 5 more minutes, add garlic and let it cook 30 s

Egg muffins with cottage cheese

I made them before going on a boat trip for a vacation and that's what we had for breakfast all week.  They were delicious and very convenient.  Scott had them in a wrap and I had them in a bun or just like that.  Egg muffins with cottage cheese Ingredients 7                                      Extra large eggs 2 cups                            Cottage cheese 1/4 cup                          Grated cheddar cheese 4                                     Cooked, cool diced carrots  1/2 cup                          Cooked, cool,  finely cut string beans  1 teaspoon                    Oregano 1/2 teaspoon                Garlic powder 2                                      Scallions 1/2 teaspoon                Salt and pepper 2 slices                          Cooked bacon (optionnal) Directions Preheat the oven to 450°F. Cut the veggies, put on a baking sheet, lined with parchment paper.  Spray with olive oil, season with salt and pepper.

Banana, coffee, peanut butter smoothie

Complete, balanced breakfast in one mug.  Banana, peanut butter smoothie Ingredients 1                                                                          Frozen banana 1/4 cup                                                              Oatmeal 1 tablespoon                                                     Ground flax seeds 2 tablespoon                                                    Peanut butter 1 teaspoon                                                        Vanilla About 1/2 cup                                                  Coffee (or 1 tablespoon cocoa) About 1/2 cup                                                   Milk Directions  Put the banana, oatmeal, seeds, peanut butter and vanilla in your smoothie cup, fill it with half coffee, half milk.  Blend 20 seconds. Chocolate or coffee, both flavors work well here.  Make it à la you and enjoy!                                               Nutrition facts:

Satisfying breakfast because of the proteins and healthy fat from the peanut butter, seeds and soy milk, the fibers from the berries and oatmeal and no sugar added.  Delicious and convenient, I enjoy it while driving to work. Tortilla pizza

Perfect Week Day Pizza This one is truly à la Scott.  My man is a pizza lover, well I'd say it's à la Claudie also because I'm French Canadian and we like our pizza all dressed which means with peppers, mushrooms and pepperoni.  To make it palatable  for Scott, I substitute the peppers for string beans and the mushrooms with carrot ribbons.  On the picture the string beans looks like peppers right? Tortilla pizza Ingredients 1 tortilla per person A thin layer of pizza sauce Mozzarella cheese to taste 1 tablespoon of parmesan A handful of string beans A few carrots ribbons, shaved with the peeler Some kind of meat (optional).  On the picture is sliced homemade left over chicken meatballs from yesterday. Directions Preheat the oven to 400°F. Spray olive oil on a tortilla and put in the oven for 3 mintes to crisp up.  Spread the sauce, the cheeses, the veggies and meat if using.   Cook 10 minutes + 2 minutes on broil, or to desired d

Self-sustainability

As far as I remember I always had a desire to be self-sustainable.   When I was a child I wanted to live on a farm and raise goats for milk and wool.  I thought I would be fed and warm.  The covid 19 bring back that feeling.  I'm not planing to buy a farm but I'm trying to grow veggies from scraps.  I have a celery in the garden, an iceberg lettuce and a carrot top in the water.  I recently learned that the leaves are edible.  I'm also sprouting mung beans.  I'm hoping to be able to eat fresh food and go to the grocery store as little as possible.  Two weeks later, the celery and the iceberg are in the garden. The carrots tops didn't  grow.   I am sprouting lentils now.  First I soaked them in water for one day.  After a day you can already see germination happening.  Few days later I was eating fresh food. I made fresh food from dry one!  I feel powerful like Tom Hanks in Cast Away. Update ( July 15, 202

Grandma's bread, made with milk

I'm making bread this morning.  Yesterday I asked aunt Jacinthe to give me Grandma's recipe and she took a picture of it.  I love to see grandma's hand writing and the way it is redacted.  I wonder if she wrote down her mom's instructions.  It doesn"t seem to be  from a book.  I'll have to ask around. I found yeast in the pantry with a 2017 expiration date.  I thought I would steep it in water with sugar and see if it still good or not.  After 10 minutes I was not sure so I thought I would take a picture and asked my aunt if she thinks it's ok.  By the time I got my phone I could see that it was good.  Lesson learned: don't toss your yeast before trying it out.
