Lentil burger with blue cheese

I'm not vegetarian but I think we eat too much meat.  I make peace with my love for animals and my love for meat by cooking more and more plant based proteins and my husband enjoys most of them too. Lentil is one of them and is a good substitute for ground meat.  I make loaf with them and burgers.  Here's a successful new flavor I tried out.   Lentil burger with blue cheese  Ingredients  2 cups                                                                   Lentils  About 4 cups                                                      Vegetable stock 2                                                                             Eggs About 3/4 cup                                                     Bread crumbs 1 tablespoon                                                      Montréal seasoning 1/4 teaspoon                                                       Red pepper flakes 5 oz.                                                                       Blue cheese crumbles 1       

Quinoa salad

This is a regular in summer for us, so convenient for the boat, picnics and to bring to work.  When I see the minth in my garden growing, I start to make it. Quinoa salad Ingredients  2 cups                                                               Vegetable stock  1 cup                                                                 Quinoa 3 cups                                                               Cut string beans 4 tablespoons                                                  Olive oil and lemon dressing  1/2 cup                                                              Feta cheese 1/2 cup                                                              Minced minth 1 tablespoon                                                    Lemon juice Directions  Cook the quinoa according to package directions.  Cut the string beans and add them to the quinoa 5 minutes before the end of the time it takes to cook. Strawberry shortcake ancestor

Sometimes I wonder why we cook and I think we are just children playing with our food.   I also think we have a need to be creative and it seems to me that the industry understands that all too well. They exploit it and encourage people to make recipes with their processed product(s).  I prefer using ingredients.  When I went to the farm to buy strawberries there was a angel cake evidently in display. Quick, no cooking marinara sauce

We don't want to turn the oven on these days, so here's a delicious no cooking marinara sauce recipe, so easy and so tasty. It is inspired from (Easy Keto Marinara Sauce - Low Carb, by I BREATH I'm hungry) Quick, no cook Marinara Sauce Ingredients  28 oz.                                                                    San Marzano tomatoes 1/8 cup                                                                 Olive oil  1 teaspoon                                                          Balsamic vinegar (optional)  1 teaspoon                                                          Onion powder 1 teaspoon                                                          Garlic powder 1 tablespoon                                                       Dry basil 1 tablespoon                                                       Parsley 1 teaspoon                                                           Dry oregano 1 teaspoon                                                         

Grilled turkey meatballs

I love this recipe and I didn't think it could be any better, but grilled... oh! My! oh! My!  You have to try them. I used this grate that I bought years ago and forgot about it till now. Gin à l'orange

When I was young this gin was our cold medicine, it still is... I know I'm old.  I hated it but it was effective.  We drink it with hot water, lemon juice and honey or maple syrup.  When I moved to United States and couldn't get any, I missed it.  Now I do get some each time I cross the border, coming back from visiting my family in Quebec, Canada. Sometimes I don't want it hot so here's a cool recipe Gin à l'orange Ingredients 1 oz.                                                                          Floral gin ( I use De Kuyper) 1                                                                                Orange 2                                                                                Sage leaves Ice cubes Directions  Place 1 oz. of gin in a shaker ( I use a coffee mug with a lid that airtight closes) with one orange slice, one sage leaf, the juice of the orange and ice cubes.  Shake for 15 seconds and pour in a glass filled with ice cubes.  Garnish

Orange pork chop

Those are boneless and baked but they are equally good bone-in and grilled.  The secret is in the marinate and only one hour required.  Tender, tasty and good for you, with no sugar added. Roasted cabbage

Cabbage is so convenient to have in the fridge, it has a long life, it's good boiled, raw, in a stir fry and roasted.  I'm sure it's good grilled too. Roasted cabbage Ingredients 1                                                                           Big cabbage, cut in 8 1/2 teaspoon                                                      Salt 1 teaspoon                                                          Chives A zigzag                                                              Siracha (or to taste) 1 teaspoon                                                          Cilantro Juice of half a lemon and freshly ground black pepper to taste. Directions  Preheat the oven to 400 °F. Cut the cabbage in 8, keeping the core to make it easier to manipulate.  Arrange the pieces on a baking sheet, lined with parchment paper.   Season with 1/4 teaspoon of salt, 1/2 teaspoon of chives, a zigzag of siracha, half the juice of half a lemon and black pepper.  Brush evenly. Gazpacho soup recipe

Gazpacho is a Spanish cold soup and there are plenty of versions of it.  This is mine. Gazpacho soup recipe Ingredients  14.5 oz.                                                               Fire roasted tomatoes (or fresh ones) 2                                                                           Pickling cucumbers, peeled 1/2                                                                        Small onion 1                                                                           Red bell pepper 1/4 cup                                                                Olive oil 1 tablespoon                                                     Fresh basil 1 tablespoon                                                     Cilantro 1 tablespoon                                                     Fresh mint 1 teaspoon                                                         Fresh sage 1/4 teaspoon                                                      Red pepper flakes 1/2 teaspoon     

Salade du jardin (garden salad)

Many quebecer have their own way to eat it, but it all involves fresh green leaf lettuce and heavy cream.  This is my version. Salade du jardin ( Garden salad) Ingredients  1 cup                                   Torn green leaf lettuce 1                                          Pickling cucumber 2 or 3                                  Radishes 1 small                               Native tomato  1 tablespoon                     Heavy cream 1/2 teaspoon                    Chives and/or onion powder and garlic powder to taste.  A lot of salt, a little bit of pepper and a little bit of heavy cream.  Half and half or even milk works, I even use almond milk or coconut milk sometimes.  They are all good but I really like the texture and taste of the heavy cream for it. Directions  Place the torn lettuce in a dish, follow with the cucumber, radishes, cream, chives or onion powder and pepper.  Mix very so lightly to avoid the cream runs down. Lentil pasta soup

I don't know why we put a cheesy crouton only on top of French onion soup, I think most soup deserves one. Olive oil and lemon salad dressing

Scott's only salad dressing.  I used it a lot for three bean or quinoa salad but it's good with any salad. Olive oil and lemon salad dressing Ingredients  2 cloves                                                   Garlic 1 tablespoon                                          Greek seasoning (Italian works well too) 1/2 cup                                                    Olive oil 5 squirts                                                  Mustard Zest and juice of one lemon Directions  Mix all ingredients in a little jar, shake and voilà.  Shake it again right before pouring on your salad.  I don't know how long it lasts, I just know that it never goes bad in our house.  It is so tasty! Use it in your favorite salad and bon appétit! 

Strawberry, Grand Marnier chocolate cake

The hardest part of the quarantine for me is having no reason to get up in the morning.  Well last night I dreamed of that cake so today I woke up on the mission of making it. Low carb turkey chili

You might not think so but my husband is independent and doesn't want to rely on me to be fed.  He is a routine guy and cooks himself this chili every week.  Off course he always tells me I'm welcome to have some but with his pickyness he's so limited so I try not to.  But who can resist a fresh made bowl of chili... not me. So today Scott is treating me.  Low carb turkey chili Ingredients  1 tablespoon                                                     Oil 3 lbs.                                                                   Ground turkey 3 cloves                                                              Garlic 3 1/2 tablespoon                                               Chili powder 1 /2 tablespoon                                                 Cumin A little bit                                                          Red pepper flakes 1 tablespoon                                                     Smoked paprika 20 oz.                                         

Hummus salad

That's my favorite lunch for work.  I make it all the time. Hummus salad Ingredients  1                                                                          Cubed pickling  cucumber  2 tablespoons                                                   Sliced olives A bunch                                                             Chives About 1/3 cup                                                   Diced tomatoes 1/2 cup                                                                Feta crumbles 2 tablespoons                                                   Hummus 2 tablespoons                                                   Olive juice (or 1 to 2 tablespoons of milk)* see note 2 cups                                                                 Romaine lettuce Salt and pepper to taste.  Directions  Mix the first 6 ingredients in a bowl.  Shred or cut the lettuce and arrange it on your plate.  Pour the cucumber mixture on top.
